Fermenting away or aging which should be ready Autumn 2025 we have:
All sparkling as standard
Heritage Dry - return of the favourite, same special recipe as last year but a little stronger - 500ml bottles - est 6.2%
Sky Valley - Like the heritage dry but with even bigger flavour with apples including Harry Masters Jersey, Fair Maid of Devon, Browns, Dabinett, White Jersey, Bramley and John o'gold - 500ml bottles - est 6.5%
Hugo - Co-ferment with real lime juice, elderflower and mint to create a Hugo cocktail-esque cider - using a blend of Browns, Fair Maid of Devon, Kingston Black, White Jersey, Bramley, Gala and unknown desert apples - 750ml bottles- est 7.2% - This will be aged out a further 2 years before avilable!
Holy Mountain - An all out flavour experience! lots of bitter sweets including Tremlett's Bitter, Harry Masters Jersey, Dabinett along with Bramley and Annie Elizabeth to try and tame the tannins! 750ml bottles - est 6.8%
Heritage Dry
Produced using a blend of cider and dessert apples largely from century old trees. Fermented using a champagne yeast, double racked for clarity and bottle carbonated.

Produced using a blend of cider and dessert apples largely from century old trees with a blend of donated pears for a semi-sweet finish. Fermented using a champagne yeast, double racked for clarity and bottle carbonated.
